Sales windows and pausing sales
Two separate ways to stop selling, and when each one is the right answer.
A ticket type can be scheduled to open and close on its own, and it can also be stopped by hand at any moment. These are separate controls and they do different jobs.
Sales windows — scheduled
Set a sales start and a sales end on a tier and it becomes buyable and unbuyable on its own. This is how Early Bird works: it opens now, closes in two weeks, and GA takes over. Nobody has to be awake at midnight.
Pause — immediate
Pausing stops a tier selling right now, without deleting it or losing its numbers. Unpause and it resumes. Use it when something is wrong — a wrong price, a capacity question, a night in doubt.
Deactivate — remove it
Deactivating takes the tier off the event. Use it when the tier should not exist at all.
Which one to reach for

Important notes
Pausing a tier does not stop the whole event. Other tiers keep selling. To stop everything, either pause every tier or unpublish the event.
